Uejima Sourokuen is a family tea producer founded in 1835 and based in Wazuka, Kyoto.
Now in its fifth generation, the family continues to produce Japanese teas including matcha, gyokuro, sencha and kabusecha.

How to Enjoy Matcha Bird
Usucha: Prepare Bird as a traditional bowl of thin matcha to experience its balance of umami, sweetness and smoothness.
Koicha: Uejima Sourokuen also recommends Bird for koicha. Using more matcha and less water creates a much thicker preparation and brings the character of the tea forward.
Because Bird is designed for drinking straight, I’d try it with water before deciding whether to use it in a latte.
