Uejima describes Bird as having a mellow taste, rich umami and sweetness, followed by a pleasant finish.

It is also recommended by the producer for koicha, the thicker preparation of matcha, as well as usucha.

Uejima Sourokuen is a family tea producer founded in 1835 and based in Wazuka, Kyoto.

Now in its fifth generation, the family continues to produce Japanese teas including matcha, gyokuro, sencha and kabusecha.

Rather than repackaging this matcha under the UJIHA name, we sell Bird in Uejima Sourokuen’s original Japanese packaging, so you know which producer made the matcha you’re drinking.

How to Enjoy Matcha Bird

Usucha: Prepare Bird as a traditional bowl of thin matcha to experience its balance of umami, sweetness and smoothness.

Koicha: Uejima Sourokuen also recommends Bird for koicha. Using more matcha and less water creates a much thicker preparation and brings the character of the tea forward.

Because Bird is designed for drinking straight, I’d try it with water before deciding whether to use it in a latte.
